While some people do online shopping/browsing, I am always on the lookout for new and unique recipes to try out, particularly baking recipes - pinterest is one of my main inspiration sites along with a few other baking websites. Saying that, this recipe is one I found of pinterest but I've changed things to make it my own and create these delicious Gin & Tonic Cupcakes!
You will need:
Cakes - Frosting -
180g butter at room temperature 140g butter at room temperature
180g self raising flour 280g icing sugar
180g caster sugar Juice of half lime
3 eggs 2 tbsp gin
4 tbsp tonic water 2 limes cut into half moons
2 tbsp gin
zest of 2 limes
- Pre heat the oven to 180 and line a muffin tray with cases
- Cream the butter, sugar and lime zest together until fully combined
- Add in the eggs and flour and mix until you have a smooth mixture, then add in the tonic water
- Spoon the mixture into the cases - each should be about 3/4 full and bake for 20 mins or until lightly brown and firm to touch
- Remove from the oven and tray and place onto a wire rack. While the cakes are hot, pierce several times with a cocktail stick and brush the top of each with the gin. Leave to cool.
- While the cakes are cooling, place the butter in a bowl and mix until light and fluffy.
- Add the icing sugar a little at a time until you have a paste like mixture
- Add in the gin and lime juice and mix until you have a fluffy mixture.
- Get a freezer bag and cut the a corner off very small and place your piping nozzle inside. Full with the buttercream mixture and pipe onto each cake. Decorate with a slice of lime
These are so simple to make but look absolutely amazing - can I go as far as saying they look like a bakery has made them?! You can add even more gin fi you really like it, but one thing to remember is that these will have a high alcohol content, so eat with caution! Oh, forgot to include, the gin I used was Gordon's but any dry gin will do.
