Mick Elysee's Mango Melting Tatin


It's been quite a while since I last featured a recipe on here, so it was high time to do one and this is the perfect African twist from chef Mick Elysee - the Mango Melting Tatin! While this isn't the easiest recipe, it tastes so amazing I've made it twice!

Mick Elysee's book Not Guilty which has just been released is full of amazing recipes which are all so simple to follow so you can get the African flavours at home. As I am more of a baker than a cook, I of course had to do one of Mick's desserts! I have to say, I did cheat a little with pastry as I bought a pre made roll rather than make it from scratch which I can do, I was just feeling lazy! Saying that, it still tasted the same and made the recipe a lot quicker.

As it has a 3 'face' difficulty, it isn't the easiest recipe in the book, but it is so worth it! The hardest part I found was making the caramel type sauce (I may have burnt it twice) but once you get it right it tastes amazing and really compliments the mango well. My favourite part was arranging the mango so it would look pretty when flipped out of the pan! I tried using both fresh and tinned mango with fresh working better as it kept it's shape rather than going too mushy. I didn't have any ice cream when I made this, but I can only imagine how delicious it would make this!

This Mango Tatin is the perfect quick recipe to make and will certainly impress everyone - from how it looks to the taste, which is incredible! You get the sweetness from the mango and caramel mixed with the slight crunch from the pastry. Every recipe in Not Guilty is so easy to follow with a step-by-step guide and while some use ingredients that aren't widely heard of in the UK, if you are all about expanding your tastes, then you have to try some of these recipes!
